Description

This Chili Bake is a hearty and healthy layered casserole featuring extra-lean ground beef, black beans, corn, and green chiles. Wrapped in whole wheat tortillas and topped with reduced-fat cheddar cheese, it’s a flavorful, protein-packed meal perfect for weeknight dinners or meal prep.


Ingredients

  • 1 pound extra-lean ground beef (95% lean)
  • 2 cans (8 ounces each) no-salt-added tomato sauce
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup frozen corn
  • 1 can (4 ounces) chopped green chiles
  • 2 tablespoons dried minced onion
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 6 whole wheat tortillas (8 inches)
  • 1 cup shredded reduced-fat cheddar cheese

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, cook the ground beef until browned, breaking it up with a spoon. Drain any excess fat.
  3. Add tomato sauce, black beans, corn, green chiles, minced onion, chili powder, cumin, garlic powder, and oregano. Stir well and simmer for 5–7 minutes until heated through.
  4. Place a small amount of the chili mixture in the center of each tortilla and roll up tightly. Arrange the rolled tortillas seam-side down in the prepared baking dish.
  5. Pour any remaining chili mixture over the top of the tortillas and sprinkle evenly with shredded cheddar cheese.
  6. Bake for 20–25 minutes, until the cheese is melted and bubbly.
  7. Remove from oven, let cool for a few minutes, and serve warm.

Notes

  • Use extra-lean ground beef to keep this dish lower in fat.
  • Substitute ground turkey or chicken for a lighter version.
  • For extra flavor, add a splash of lime juice or chopped fresh cilantro before serving.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
