This Chili Bake is a hearty and healthy layered casserole featuring extra-lean ground beef, black beans, corn, and green chiles. Wrapped in whole wheat tortillas and topped with reduced-fat cheddar cheese, it’s a flavorful, protein-packed meal perfect for weeknight dinners or meal prep.

- 1 pound extra-lean ground beef (95% lean)
- 2 cans (8 ounces each) no-salt-added tomato sauce
- 1 can (15 ounces) black beans, rinsed and drained
- 1 cup frozen corn
- 1 can (4 ounces) chopped green chiles
- 2 tablespoons dried minced onion
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 6 whole wheat tortillas (8 inches)
- 1 cup shredded reduced-fat cheddar cheese
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- In a large skillet over medium heat, cook the ground beef until browned, breaking it up with a spoon. Drain any excess fat.
- Add tomato sauce, black beans, corn, green chiles, minced onion, chili powder, cumin, garlic powder, and oregano. Stir well and simmer for 5–7 minutes until heated through.
- Place a small amount of the chili mixture in the center of each tortilla and roll up tightly. Arrange the rolled tortillas seam-side down in the prepared baking dish.
- Pour any remaining chili mixture over the top of the tortillas and sprinkle evenly with shredded cheddar cheese.
- Bake for 20–25 minutes, until the cheese is melted and bubbly.
- Remove from oven, let cool for a few minutes, and serve warm.
Notes
- Use extra-lean ground beef to keep this dish lower in fat.
- Substitute ground turkey or chicken for a lighter version.
- For extra flavor, add a splash of lime juice or chopped fresh cilantro before serving.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
