Description

These Chile Colorado Burritos are filled with tender shredded beef, refried beans, Monterey Jack cheese, and Mexican rice, wrapped in a soft flour tortilla. Perfect for a hearty meal!


Ingredients

  • 1 prepared recipe Chile Colorado, meat shredded
  • 1 prepared recipe Mexican Rice
  • 1 prepared recipe Refried Beans
  • 10” flour tortillas, package of 8
  • 1 pound (16 ounces) Monterey Jack Cheese, shredded

Instructions

  1. Prepare the Chile Colorado, Mexican Rice, and Refried Beans. Each should be heated and laid out in bowls before assembling the burritos.
  2. Place a flour tortilla on a flat surface. Spread ¼ cup of hot refried beans across the center.
  3. Add 1/3 cup of shredded Monterey Jack cheese.
  4. Add ½ cup of shredded hot Chile Colorado.
  5. Top with 1/3 cup of hot Mexican rice.
  6. To fold the burrito: fold the side closest to you forward, then fold the left and right sides inward towards the center, and flip forward over the exposed end. Tuck in the filling as you roll.
  7. Wrap each burrito in foil, cut in half, and serve.
  8. Optional: Serve any leftover beef, beans, and rice on the side, or enjoy them as leftovers the next day.

Notes

  • Feel free to adjust the amount of fillings based on your preferences.
  • For extra flavor, you can add salsa or guacamole to the burritos before rolling.
