Description

This Chicken Torta is a flavorful sandwich featuring juicy rotisserie chicken, spicy pickled jalapeños, creamy mayonnaise, and a mix of fresh toppings like cilantro, tomato, and shredded lettuce. It’s the perfect fusion of tender chicken and vibrant, zesty flavors!


Ingredients

  • 4 bolillo rolls
  • 1 rotisserie chicken
  • 1 small can green chiles
  • 1 small can pickled jalapeños
  • 1 large tomato, diced
  • 1 cup shredded pepper jack cheese (more if desired)
  • 1 bunch cilantro, chopped
  • 1/2 white onion, diced
  • 1/2 head iceberg lettuce, finely shredded
  • 1/4 cup mayonnaise
  • Taco or fajita seasoning to taste
  • Avocado oil for the griddle

Instructions

  1. Shred the rotisserie chicken into bite-sized pieces and set aside.
  2. Heat a large skillet or griddle over medium heat and add a little avocado oil.
  3. Slice the bolillo rolls in half and lightly toast them on the griddle, cut side down, until golden and crispy.
  4. In a bowl, mix the shredded chicken with the green chiles, pickled jalapeños, diced tomato, chopped cilantro, diced onion, and mayonnaise. Season with taco or fajita seasoning to taste.
  5. Spread the chicken mixture evenly on the bottom half of each toasted bolillo roll.
  6. Top the chicken mixture with a generous amount of shredded pepper jack cheese.
  7. Place the other half of the bolillo roll on top, forming a sandwich.
  8. Return the sandwiches to the griddle and grill them on each side until the cheese is melted and the bread is golden brown, about 2-3 minutes per side.
  9. Remove from the griddle, slice, and serve hot with a side of chips or a fresh salsa!

Notes

  • For extra heat, you can add more pickled jalapeños or use a spicier cheese like habanero jack.
  • If you prefer a crunchier texture, add more shredded iceberg lettuce inside the sandwich.
  • This recipe can be made in advance by preparing the chicken mixture and storing it in the fridge for up to 2 days.
