Ingredients

Units Scale
  • 1 small bag fresh baby spinach
  • 1 dash black pepper
  • 1 dash herb and garlic seasoning
  • 8 oz shredded mozzarella cheese
  • 6 thin-sliced chicken breasts
  • 1 container (about 8 oz) green onion cream cheese
  • 1/4 cup olive oil
  • 1/2 cup chicken broth
  • 8 oz sliced mushrooms (optional, but would complement the dish)

Instructions

  • Preheat oven to 375ยฐF (190ยฐC).
  • In a large oven-safe skillet, sautรฉ the sliced mushrooms in olive oil until softened (if using). Add the spinach and cook until wilted. Season with black pepper and herb and garlic seasoning.
  • Spread the green onion cream cheese evenly over the chicken breasts.
  • Place the chicken breasts on top of the spinach and mushroom mixture in the skillet.
  • Pour chicken broth around the chicken.
  • Top the chicken breasts with shredded mozzarella cheese.
  • Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.

Notes

  • Try using different cheeses like cheddar or Monterey Jack for a flavor twist.
  • Add extra vegetables like bell peppers or onions for more texture and nutrition.
  • For a creamier dish, substitute heavy cream for the chicken broth.
  • If you donโ€™t have an oven-safe skillet, transfer everything to a baking dish before baking.
  • Serve with cauliflower rice or a fresh salad for a complete low-carb meal.
