  • 8 small skinless, boneless chicken thighs (2 pounds)
  • Kosher salt
  • Freshly ground black pepper
  • All-purpose flour, for dusting
  • 1/2 cup extra-virgin olive oil
  • 8 garlic cloves, halved lengthwise and lightly smashed
  • 4 large rosemary sprigs, broken into 2-inch pieces
  • 2 cups chicken stock or low-sodium broth
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons unsalted butter
  • 1/2 cup Peppadew peppers or other pickled peppers, sliced

Instructions

  1. Season the chicken thighs with kosher salt and freshly ground black pepper, then lightly dust them with all-purpose flour.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken thighs and cook for 5-6 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the garlic cloves and rosemary. Sauté for 1-2 minutes, until the garlic is fragrant.
  4. Pour in the chicken stock and fresh lemon juice, scraping up any brown bits from the bottom of the skillet.
  5. Return the chicken to the skillet and simmer for 10-15 minutes, allowing the flavors to meld together and the sauce to thicken slightly.
  6. Stir in the unsalted butter, then add the sliced Peppadew peppers. Cook for an additional 2-3 minutes until the sauce is glossy and slightly reduced.
  7. Serve the chicken with the sauce and garnish with extra rosemary sprigs if desired.

Notes

  • If you can’t find Peppadew peppers, any mild pickled pepper will work.
  • For a deeper flavor, marinate the chicken in olive oil, garlic, and rosemary for an hour before cooking.
  • Serve with mashed potatoes, rice, or crusty bread to soak up the sauce.
