- 8 small skinless, boneless chicken thighs (2 pounds)

- All-purpose flour, for dusting
- 1/2 cup extra-virgin olive oil
- 8 garlic cloves, halved lengthwise and lightly smashed
- 4 large rosemary sprigs, broken into 2-inch pieces
- 2 cups chicken stock or low-sodium broth
- 2 tablespoons fresh lemon juice
- 2 tablespoons unsalted butter
- 1/2 cup Peppadew peppers or other pickled peppers, sliced
Instructions
- Season the chicken thighs with kosher salt and freshly ground black pepper, then lightly dust them with all-purpose flour.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken thighs and cook for 5-6 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the garlic cloves and rosemary. Sauté for 1-2 minutes, until the garlic is fragrant.
- Pour in the chicken stock and fresh lemon juice, scraping up any brown bits from the bottom of the skillet.
- Return the chicken to the skillet and simmer for 10-15 minutes, allowing the flavors to meld together and the sauce to thicken slightly.
- Stir in the unsalted butter, then add the sliced Peppadew peppers. Cook for an additional 2-3 minutes until the sauce is glossy and slightly reduced.
- Serve the chicken with the sauce and garnish with extra rosemary sprigs if desired.
Notes
- If you can’t find Peppadew peppers, any mild pickled pepper will work.
- For a deeper flavor, marinate the chicken in olive oil, garlic, and rosemary for an hour before cooking.
- Serve with mashed potatoes, rice, or crusty bread to soak up the sauce.
