  • 2 tbsp olive oil, divided
  • 5 large hot Italian sausage links
  • 4 bone-in, skin-on chicken thighs
  • 2 bell peppers, sliced
  • 4 large Yukon Gold potatoes, quartered
  • 1 onion, sliced
  • 1 tsp Cajun seasoning
  • 2 tsp dried Italian herbs
  • 2 tsp kosher salt
  • Freshly ground black pepper, to taste

Instructions

  • Preheat Oven:

    • Preheat oven to 450ยฐF (230ยฐC).
  • Prepare the Chicken:

    • Cut two slashes down to the bone on the skin side of each chicken thigh.
    • Rub with 1 tbsp olive oil and season with Cajun seasoning and Italian herbs.
  • Prepare the Vegetables:

    • In a large mixing bowl, toss onions, peppers, and potatoes with Cajun seasoning, Italian herbs, salt, and black pepper.
    • Drizzle with 1 tbsp olive oil and mix until evenly coated.
  • Assemble on Roasting Pans:

    • Divide the vegetable mixture between two foil-lined roasting pans.
    • Evenly space chicken thighs (skin side up) on top, positioning potatoes near the top for crisping.
  • Roast:

    • Bake for 25 minutes.
  • Cook the Sausage:

    • While the chicken roasts, heat 1 tbsp olive oil in a skillet over medium heat.
    • Add sausage links and cook for 3 minutes per side, until browned.
    • Lightly pierce sausages in several places with a knife to release juices.
    • Remove from heat and let rest 3-5 minutes before slicing into 2-inch pieces.
  • Add Sausage & Finish Roasting:

    • Add sliced sausage evenly to the roasting pans.
    • Roast for an additional 20 minutes, until chicken is golden brown and potatoes are crispy.
