- 5 large hot Italian sausage links
- 4 bone-in, skin-on chicken thighs

- 2 tsp kosher salt

Preheat Oven:
- Preheat oven to 450ยฐF (230ยฐC).

Prepare the Chicken:
- Cut two slashes down to the bone on the skin side of each chicken thigh.
- Rub with 1 tbsp olive oil and season with Cajun seasoning and Italian herbs.

- In a large mixing bowl, toss onions, peppers, and potatoes with Cajun seasoning, Italian herbs, salt, and black pepper.
- Drizzle with 1 tbsp olive oil and mix until evenly coated.

- Evenly space chicken thighs (skin side up) on top, positioning potatoes near the top for crisping.
