Chicken Sausage Breakfast Quesadillas are a hearty and delicious breakfast option featuring scrambled eggs, flavorful chicken sausage, and melted cheese, all sandwiched in soft flour tortillas. Serve with your favorite taco sauce for an extra kick.

- 1 pound breakfast chicken sausage links (pre-cooked)
- 8 eggs
- 1/4 cup milk or heavy cream
- Kosher salt and pepper, to taste
- Blackstone Lumberjack Breakfast seasoning (optional)
- Cooking oil of choice
- 16 soft taco-size flour tortillas
- 2 to 3 cups shredded cheese of choice
- Taco sauce of choice (optional)
Instructions
- Slice or crumble the cooked chicken sausage into bite-sized pieces.
- In a bowl, whisk together eggs, milk or heavy cream, salt, pepper, and optional seasoning.
- Heat a skillet over medium heat with a little cooking oil. Pour in the egg mixture and scramble until just set. Remove from heat.
- Lay out one tortilla and sprinkle a layer of shredded cheese over half of it.
- Add a portion of scrambled eggs and chicken sausage on top of the cheese, then fold the tortilla in half.
- Heat a skillet over medium heat and lightly grease. Cook the quesadilla for 2–3 minutes per side, until golden brown and cheese is melted.
- Repeat with remaining tortillas and fillings.
- Cut quesadillas into wedges and serve with taco sauce if desired.
Notes
- Use pre-cooked sausage for convenience; raw sausage can also be cooked before adding to quesadillas.
- Mix and match cheeses such as cheddar, Monterey Jack, or pepper jack for different flavors.
- These quesadillas can be made ahead and reheated in a skillet or oven.
