- A handful of dried cranberries
- 2 chicken breasts, boiled and cubed
- 3 apples, deseeded and cubed
- A handful of cashew nuts
- 3 tbsp Greek yogurt
- 1/2 tsp Dijon mustard
- A pinch of salt & pepper
Instructions
- Place cranberries in a small bowl and pour over boiling water. Let them soak for 15 minutes, then drain.
- Cut boiled chicken into cubes. Deseed and cube the apples.
- In a large mixing bowl, combine the chicken, apples, cranberries, and cashews.
- In a separate bowl, mix Greek yogurt and Dijon mustard.
- Pour the dressing over the salad and toss to combine.
- Season with salt and pepper to taste.
- Serve immediately or refrigerate for later!
