1 large onion, diced

4 cups cooked chicken, chopped

2 cups shredded Monterey Jack cheese

1 cup shredded medium cheddar cheese

8 tortillas

2 tbsp oil (for brushing, optional)
Instructions

Prepare the Seasoning:

Mix all seasoning ingredients in a small bowl.

Cook the Onions & Chicken:

Heat 1 tbsp oil in a skillet over medium heat.

Add diced onions and sprinkle with seasoning.

Cook for 4-5 minutes until soft.

Add chopped chicken, toss to combine, then remove from heat.

Assemble the Quesadillas:

Mix Monterey Jack & cheddar cheese together.

Lightly brush one side of each tortilla with oil (optional for extra crispiness).

Heat a large skillet or griddle over medium-low heat.

Place a tortilla (oiled side down) in the pan.
