Description

Ingredients

Ingredients:

Seasoning Mix:

  • 1/2 tsp salt

  • 1/2 tsp chili powder

  • 1/4 tsp pepper

  • 1/4 tsp onion powder

  • 1/4 tsp garlic powder

  • 1/4 tsp cumin

Quesadillas/Assembly:

  • 1 tbsp oil

  • 1 large onion, diced

  • 4 cups cooked chicken, chopped

  • 2 cups shredded Monterey Jack cheese

  • 1 cup shredded medium cheddar cheese

  • 8 tortillas

  • 2 tbsp oil (for brushing, optional)


Instructions

  • Prepare the Seasoning:

    • Mix all seasoning ingredients in a small bowl.

  • Cook the Onions & Chicken:

    • Heat 1 tbsp oil in a skillet over medium heat.

    • Add diced onions and sprinkle with seasoning.

    • Cook for 4-5 minutes until soft.

    • Add chopped chicken, toss to combine, then remove from heat.

  • Assemble the Quesadillas:

    • Mix Monterey Jack & cheddar cheese together.

    • Lightly brush one side of each tortilla with oil (optional for extra crispiness).

    • Heat a large skillet or griddle over medium-low heat.

    • Place a tortilla (oiled side down) in the pan.

    • Add a handful of cheese on one half, followed by ยฝ โ€“ โ…” cup chicken mixture.

    • Sprinkle more cheese on top, then fold over the tortilla.

  • Cook & Serve:

    • Cook for 2-3 minutes on one side, then flip and cook for another 2-3 minutes until golden and crispy.

    • Slice into triangles and serve hot


Notes

  • Add more flavor: Try adding diced bell peppers or jalapeรฑos.

  • Make it creamy: Spread a little sour cream or guacamole inside before folding.
