Description

This Chicken Puttanesca is a quick, easy, and flavor-packed dish featuring tender chicken simmered in a rich tomato, olive, and caper sauce. With bold Mediterranean flavors, itโ€™s perfect for a satisfying, high-protein dinner!


Ingredients

  • 1 tablespoon olive oil

  • 4 chicken thighs (bone-in, skin-on)

  • Salt and pepper, to taste

  • 1 onion, diced

  • 4 cloves garlic, chopped

  • 1/2 teaspoon red chili pepper flakes

  • 2 anchovy fillets, chopped

  • 1/2 cup chicken broth

  • 1 (14-ounce) can diced tomatoes (or marinara sauce)

  • 1 tablespoon capers

  • 1/2 cup olives, pitted and coarsely chopped

  • 1 teaspoon oregano (or Italian seasoning)

  • 1 tablespoon fish sauce (optional)

Instructions

  • Heat olive oil in a large skillet over medium-high heat. Season chicken thighs with salt and pepper, then sear until golden brown (about 3-5 minutes per side). Remove and set aside.

  • In the same skillet, sautรฉ the onion until tender (3-5 minutes). Add garlic, red pepper flakes, and anchovies, cooking until fragrant (about 1 minute).

  • Pour in the chicken broth and deglaze the pan by scraping up browned bits with a wooden spoon.

  • Stir in diced tomatoes, capers, olives, oregano, and fish sauce (if using). Return the chicken to the pan, cover, and simmer over medium-low heat until the chicken is cooked through (about 15 minutes).

  • Alternative Cooking Methods:

    • Oven Method: Preheat oven to 400ยฐF (200ยฐC). Cover and bake for 15 minutes.

    • Slow Cooker Method: Combine all ingredients in a slow cooker and cook for 2-3 hours on high or 4-6 hours on low.
