Ingredients

  • 2 cups cooked chicken, shredded
  • 1/2 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup black olives, sliced
  • 1 package pizza dough (store-bought or homemade)
  • 1 tbsp olive oil (for brushing)
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste

Instructions

  • Preheat the Oven:
    Preheat your oven to 400°F (200°C).
  • Prepare the Filling:
    In a bowl, mix shredded chicken with pizza sauce, mozzarella cheese, bell pepper, red onion, black olives, and a pinch of salt and pepper. Stir to combine.
  • Assemble the Pockets:
    Roll out the pizza dough on a floured surface and cut it into squares or circles. Place a generous spoonful of the chicken mixture in the center of each dough piece. Fold the dough over to form a pocket, pressing the edges to seal.
  • Bake the Pockets:
    Place the stuffed pockets on a baking sheet lined with parchment paper. Brush the tops with olive oil and sprinkle with Italian seasoning. Bake for 12-15 minutes, or until golden brown and crispy.
  • Serve:
    Serve the pizza pockets hot with extra pizza sauce or ranch on the side for dipping.
