- 3 boneless skinless chicken breasts, cut in half horizontally to make 6 breast halves
- 1/2 cup freshly grated Parmesan cheese, divided
- 2 eggs
- 1 cup panko bread crumbs
- 1 cup Italian-style bread crumbs or panko
- 1 teaspoon garlic powder
- 3 Tablespoons oil
- 24 ounces marinara sauce (or homemade)
- 1 cup shredded mozzarella cheese
- Fresh basil leaves, for serving
Instructions
- Preheat oven to 375°F (190°C).
- In a shallow bowl, beat the eggs. In another bowl, combine panko, Italian bread crumbs, garlic powder, and half of the Parmesan cheese.
- Dip each chicken breast half into the eggs, then coat evenly with the breadcrumb mixture.
- Heat oil in a large skillet over medium heat. Cook chicken until golden brown on both sides, about 3–4 minutes per side. Remove from skillet.
- Place chicken in a baking dish. Spoon marinara sauce over each piece and sprinkle with mozzarella and remaining Parmesan cheese.
- Bake in the preheated oven for 20–25 minutes, until chicken is cooked through and cheese is melted and bubbly.
- Garnish with fresh basil leaves before serving.
Notes
- For extra crispiness, broil the chicken for 1–2 minutes at the end of baking.
- Serve with pasta, rice, or a side salad.
- Use homemade marinara for richer flavor.
- Chicken can be pounded slightly thinner for more even cooking.
