Description
Chicken Paprikash is a classic Hungarian comfort dish featuring tender chicken simmered in a rich, creamy paprika sauce. Perfect over noodles, rice, or mashed potatoes for a hearty meal.

- 2 tbsp Olive oil or lard
- 2 onions, finely chopped
- 1 red bell pepper, chopped
- 1 kg (2.2 pounds) chicken thighs, boneless and skinless
- 1 tbsp tomato paste
- 3 garlic cloves, minced
- 2 1/2 tbsp paprika powder
- 1/2 tsp smoked paprika powder (optional)
- 3 tbsp all-purpose flour
- 500 ml (2 cups) chicken broth
- 160 g (2/3 cup) sour cream
Instructions
- Heat olive oil or lard in a large pan over medium heat. Sauté onions and red bell pepper until soft, about 5 minutes.
- Add chicken thighs and cook until lightly browned on all sides.
- Stir in tomato paste, garlic, paprika powder, and smoked paprika (if using). Cook for 1–2 minutes until fragrant.
- Sprinkle flour over the mixture and stir to coat the chicken and vegetables.
- Gradually add chicken broth, stirring constantly to avoid lumps. Bring to a simmer.
- Cover and simmer on low heat for 25–30 minutes, until chicken is cooked through and tender.
- Remove from heat and stir in sour cream until smooth and creamy. Adjust seasoning with salt and pepper to taste.
- Serve hot over noodles, rice, or mashed potatoes.
Notes
- For extra flavor, marinate the chicken in paprika for 1 hour before cooking.
- Use a combination of sweet and smoked paprika for a deeper flavor profile.
- Do not boil after adding sour cream to prevent curdling; just warm through gently.
