  • 5 oz (150g) mushrooms, chopped
  • 2 garlic cloves, minced
  • 1 scallion, thinly chopped
  • 2 Tbsp parsley, finely chopped
  • 1/2 tsp dried oregano
  • 1 tsp crushed red pepper (optional)
  • 1 Tbsp olive oil

Instructions

  • Prepare Ingredients: Chop the chicken into bite-sized pieces. Wash and chop the mushrooms, scallion, and parsley.
  • Cook the Chicken: In a pan over medium-high heat, add olive oil and the chopped chicken. Season with salt, crushed red pepper (if using), scallion, oregano, and black pepper. Sautรฉ for 4โ€“5 minutes, stirring occasionally.
  • Add the Mushrooms: Stir in the mushrooms and cook for another 2โ€“3 minutes.
  • Finish with Garlic: Add the minced garlic, stir 2โ€“3 more times, then turn off the heat.
