- 1 tablespoon olive oil
- 1 tablespoon sesame oil
- 1 pound ground chicken (ground turkey also works)
- 1 medium/large sweet Vidalia or yellow onion, diced small
- 1/3 cup hoisin sauce
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon rice wine vinegar
- 1 tablespoon Asian chili garlic sauce (or sriracha, to taste)
- 3 cloves garlic, finely minced or pressed
- 1 teaspoon ground ginger (or 2 teaspoons freshly grated ginger)
- 8-ounce can water chestnuts, drained and diced small
- 2 to 3 green onions, sliced into thin rounds
- 1/2 teaspoon salt (or to taste)
- 1/2 teaspoon freshly ground black pepper (or to taste)
- Butter lettuce leaves, for serving
Instructions
- Cook the Chicken:
- Heat olive oil and sesame oil in a large skillet over medium-high heat. Add ground chicken and cook until fully cooked, breaking it up into crumbles as it cooks.
- Add Flavor:
- Stir in the onion, hoisin sauce, soy sauce, rice wine vinegar, and chili garlic sauce. Cook for about 5 minutes, stirring occasionally, until the onion is soft, translucent, and most of the liquid is absorbed.
- Finish the Filling:
- Add garlic and ginger, stir to combine, and cook for about 1 minute until fragrant. Stir in the water chestnuts, green onions, salt, and pepper, and cook for 2 more minutes until everything is tender. Adjust seasoning to taste.
- Serve:
- Spoon about ¼ cup of the chicken mixture into each butter lettuce leaf and serve immediately.
Notes
- For a spicier version, increase the chili garlic sauce or add sriracha to taste.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or microwave before serving.
