These crispy Chicken Katsu Sandwich Sliders are the perfect appetizer or snack! Fried, breaded chicken cutlets, a creamy cabbage salad, and rich katsu sauce come together in soft, sweet slider buns for a delicious bite-sized treat. Great for game nights, parties, or a quick meal!

Sliders:
- 4 slider buns
- 2 boneless chicken thighs
- Salt & pepper, to taste
- 1/2 cup flour
- 1 egg, for egg wash
- 1 cup Panko crumbs
- Neutral oil, for frying
- Katsu sauce, for serving
Creamy Cabbage Salad:
- 2 cups thinly sliced cabbage
- 3 tbsp Japanese mayo
- 1/4 tsp pepper
- 1 tsp sugar
- 1 tsp lemon juice
Instructions
1. Prepare the Cabbage Salad:
- Thinly slice cabbage and place in a bowl.
- Add mayo, pepper, sugar, and lemon juice. Mix well and set aside.
2. Bread & Fry the Chicken:
- Season chicken thighs with salt & pepper.
- Dredge each thigh in flour, then egg wash, then coat with Panko crumbs.
- Heat oil in a pan over medium heat. Shallow fry for 4-5 minutes per side until golden brown.
- Place cooked chicken on a cooling rack to drain excess oil. (Optional: Sprinkle salt while hot for extra flavor.)
3. Assemble the Sliders:
- Place two slider buns over each chicken thigh and cut to match the bun shape.
- Spread katsu sauce inside each bun.
- Layer the cut chicken katsu, add a generous amount of cabbage salad, then top with the other bun half.
4. Serve & Enjoy!
- Serve the extra chicken pieces with sliders and extra katsu sauce on the side. Enjoy!
Notes
- Slider Buns: Use Hawaiian rolls for a slightly sweet flavor.
- Katsu Sauce Alternative: Mix 2 tbsp Worcestershire sauce, 1 tbsp ketchup, 1 tsp soy sauce, and 1 tsp sugar for a quick homemade version.
- Extra Crunch: Double-coat the chicken by repeating the flour, egg, and Panko steps for an extra crispy crust.
