Description

Chicken Gloria is a rich and comforting casserole dish featuring tender pan-fried chicken breasts layered with savory cremini mushrooms, sweet onions, and creamy Muenster cheese, all enveloped in a luscious sherry cream sauce.


Ingredients

  • 4 boneless skinless chicken breast halves (8 ounces each)
  • 1 cup all-purpose flour
  • 1 teaspoon kosher salt
  • 1/2 teaspoon white pepper
  • 8 tablespoons butter
  • 4 tablespoons extra virgin olive oil
  • 1 pound cremini mushrooms, sliced
  • 1 medium or 1/2 large sweet onion, cut into strips
  • 1 tablespoon garlic, minced
  • 1/4 cup dry sherry wine
  • 3 tablespoons all-purpose flour (for sauce)
  • 1 cup chicken stock
  • 1 1/2 cups heavy cream
  • 8 ounces Muenster cheese, sliced

Instructions

  1. Butterfly each chicken breast half and cut each into two, yielding eight 4-ounce pieces.
  2. In a bowl, combine 1 cup flour with salt and pepper. Dredge each chicken piece in the seasoned flour and set aside.
  3. Spray a 9×13 inch casserole dish with non-stick spray and set aside. Preheat oven to 375°F (190°C).
  4. Dredge the chicken pieces a second time in the same flour mixture and set aside. Discard used flour afterward.
  5. In a large sauté pan, melt 4 tablespoons butter with 2 tablespoons olive oil over medium-high heat. Brown four chicken pieces for 2–3 minutes per side and transfer to the casserole dish. Repeat with remaining chicken using 4 more tablespoons butter and 2 tablespoons oil.
  6. Discard used fat and wipe pan clean. Heat 2 tablespoons butter with 1 tablespoon oil over high heat.
  7. Add mushrooms and cook until browned, about 5–8 minutes. Spread over the chicken in the dish.
  8. In the same pan, add remaining butter and oil, sauté onions for 3 minutes over medium-high heat. Add garlic and cook for another minute.
  9. Pour in sherry and cook until mostly evaporated.
  10. Reduce heat to medium, stir in 3 tablespoons flour and cook for 2 minutes.
  11. Add chicken stock, stir and cook for 2 minutes until slightly thickened.
  12. Stir in heavy cream and cook for 2 more minutes until smooth and heated through.
  13. Pour sauce over the chicken and vegetables in the casserole dish. Top with Muenster cheese slices.
  14. Bake uncovered for 25–30 minutes, or until bubbly and golden.

Notes

  • You can substitute dry white wine for the sherry if needed.
  • Use freshly grated cheese for best melt and flavor.
  • Dish can be prepped ahead and refrigerated before baking.
  • Pairs well with mashed potatoes or rice.
