- 3 tablespoons all-purpose flour (for sauce)
- 1 cup chicken stock
- 1 1/2 cups heavy cream
- 8 ounces Muenster cheese, sliced
Instructions
- Butterfly each chicken breast half and cut each into two, yielding eight 4-ounce pieces.
- In a bowl, combine 1 cup flour with salt and pepper. Dredge each chicken piece in the seasoned flour and set aside.
- Spray a 9×13 inch casserole dish with non-stick spray and set aside. Preheat oven to 375°F (190°C).
- Dredge the chicken pieces a second time in the same flour mixture and set aside. Discard used flour afterward.

- Discard used fat and wipe pan clean. Heat 2 tablespoons butter with 1 tablespoon oil over high heat.
- Add mushrooms and cook until browned, about 5–8 minutes. Spread over the chicken in the dish.
- In the same pan, add remaining butter and oil, sauté onions for 3 minutes over medium-high heat. Add garlic and cook for another minute.
- Pour in sherry and cook until mostly evaporated.
- Reduce heat to medium, stir in 3 tablespoons flour and cook for 2 minutes.
- Add chicken stock, stir and cook for 2 minutes until slightly thickened.
- Stir in heavy cream and cook for 2 more minutes until smooth and heated through.
- Pour sauce over the chicken and vegetables in the casserole dish. Top with Muenster cheese slices.
- Bake uncovered for 25–30 minutes, or until bubbly and golden.
Notes
- You can substitute dry white wine for the sherry if needed.
