Description

Ingredients

  • 2 lbs chicken breast, sliced into strips
  • 3/4 lb fettuccine pasta (or angel hair/vermicelli)
  • 1 lb white mushrooms, thickly sliced
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 3 1/2 cups half and half
  • 1/4 cup fresh parsley, finely chopped (plus more for garnish)
  • 1 tsp sea salt (or to taste)
  • 1/4 tsp black pepper (or to taste)
  • 3 tbsp olive oil, divided
  • 1 tbsp unsalted butter

Instructions

  • Cook the pasta: Boil 4 quarts of water with 1 tbsp salt. Cook fettuccine according to package instructions. Drain and set aside.
  • Cook the chicken: Season sliced chicken breast with salt and pepper. Heat 2 tbsp olive oil in a large skillet over medium-high heat. Sautรฉ chicken until lightly golden and cooked through (about 5 minutes). Remove from pan and cover to keep warm.
  • Sautรฉ the veggies: In the same pan, heat 1 tbsp olive oil and 1 tbsp butter over medium-high heat. Add onion and sautรฉ 3 minutes until soft. Stir in mushrooms and cook until tender (5-7 minutes), stirring frequently. Add garlic and sautรฉ 30 seconds until fragrant.
  • Make the Alfredo sauce: Pour in half and half and bring to a simmer. Cook for 8-10 minutes, stirring occasionally, until the sauce starts to thicken.
  • Combine everything: Add the cooked chicken back to the pan along with ยผ cup chopped parsley. Season with additional salt and pepper to taste.
  • Add the pasta: Toss in the cooked fettuccine, stirring to combine. Let it heat through for 1 minute, then remove from heat. Cover and let rest 10-15 minutes before serving.
  • Garnish & serve: Stir the pasta before serving and garnish with fresh parsley.

Notes

  • Substitute heavy cream for a richer Alfredo sauce.
  • Use grated Parmesan for extra flavor.
  • Letting the pasta rest allows it to absorb the sauce, making it even creamier.
