- 3 tablespoons vegetable oil
- 6 (6 ounce) skinless, boneless chicken breast halves, thinly sliced
- 1/2 cup sliced onions
- 1/2 cup sliced red bell pepper
- 1/2 cup tomato juice
- 2 tablespoons taco seasoning mix
- 1 cup salsa
- 8 (1/2 inch thick) slices French bread
- 2 cups shredded Cheddar cheese
Instructions
- Heat vegetable oil in a large skillet over medium-high heat.
- Add chicken slices and cook until no longer pink, about 5-7 minutes.
- Add onions and red bell peppers; cook until softened, about 3-4 minutes.
- Stir in tomato juice and taco seasoning, simmer for 2-3 minutes until slightly thickened.
- Remove from heat and mix in salsa.
- Preheat oven broiler and place bread slices on a baking sheet.
- Top each slice of bread with chicken mixture and sprinkle with Cheddar cheese.
- Broil until cheese is melted and bubbly, about 2-3 minutes.
- Serve warm.
Notes
- Use pepper jack cheese for an extra spicy kick.
- Try serving with a dollop of sour cream or guacamole on top.
- You can substitute tortillas if you prefer a more traditional fajita wrap.
