Description

These Chicken Fajita Melts combine seasoned chicken, sautรฉed peppers and onions, and melty Cheddar cheese on toasty French bread slices for a bold, satisfying twist on classic fajitas.


Ingredients

  • 3 tablespoons vegetable oil
  • 6 (6 ounce) skinless, boneless chicken breast halves, thinly sliced
  • 1/2 cup sliced onions
  • 1/2 cup sliced red bell pepper
  • 1/2 cup tomato juice
  • 2 tablespoons taco seasoning mix
  • 1 cup salsa
  • 8 (1/2 inch thick) slices French bread
  • 2 cups shredded Cheddar cheese

Instructions

  1. Heat vegetable oil in a large skillet over medium-high heat.
  2. Add chicken slices and cook until no longer pink, about 5-7 minutes.
  3. Add onions and red bell peppers; cook until softened, about 3-4 minutes.
  4. Stir in tomato juice and taco seasoning, simmer for 2-3 minutes until slightly thickened.
  5. Remove from heat and mix in salsa.
  6. Preheat oven broiler and place bread slices on a baking sheet.
  7. Top each slice of bread with chicken mixture and sprinkle with Cheddar cheese.
  8. Broil until cheese is melted and bubbly, about 2-3 minutes.
  9. Serve warm.

Notes

  • Use pepper jack cheese for an extra spicy kick.
  • Try serving with a dollop of sour cream or guacamole on top.
  • You can substitute tortillas if you prefer a more traditional fajita wrap.
