Description

These Chicken Curry Puffs are a savory, crispy pastry filled with a flavorful chicken curry mixture. With a blend of spices like curry powder, turmeric, and cumin, these golden puffs make the perfect appetizer or snack for any occasion.


Ingredients

  • 3 tablespoons canola oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground chicken
  • 2 tablespoons curry powder
  • 1 1/2 teaspoons turmeric
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon sugar
  • 1/4 teaspoon fresh ground black pepper
  • 1 teaspoon salt
  • 2/3 cup chicken broth
  • 1 tablespoon cornstarch
  • 2 sheets puff pastry
  • 1 egg, beaten with 1 tablespoon water to make an egg wash
  • Sesame seeds for garnish

Instructions

  1. Preheat the oven to 400ยฐF (200ยฐC). Line a baking sheet with parchment paper.
  2. In a large skillet, heat the canola oil over medium heat. Add the diced onion and minced garlic, sautรฉing until softened, about 3-4 minutes.
  3. Add the ground chicken to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  4. Stir in the curry powder, turmeric, cumin, sugar, black pepper, and salt, cooking for another 2 minutes to allow the spices to bloom.
  5. Pour in the chicken broth, and bring to a simmer. In a small bowl, mix the cornstarch with a little water to form a slurry. Add the slurry to the skillet, stirring until the mixture thickens, about 2-3 minutes.
  6. Remove the skillet from the heat and let the filling cool for a few minutes.
  7. Roll out the puff pastry sheets on a lightly floured surface. Cut each sheet into 4 squares, making 8 total.
  8. Place a spoonful of the chicken curry mixture into the center of each square. Fold the corners to form a triangle, sealing the edges with a fork.
  9. Brush each pastry with the egg wash, then sprinkle with sesame seeds.
  10. Place the filled puffs onto the prepared baking sheet and bake for 15-20 minutes, or until golden brown and crispy.
  11. Remove from the oven and serve warm. Enjoy!

Notes

  • For a spicier kick, add a pinch of chili flakes or diced jalapeรฑos to the filling.
  • These curry puffs can be made ahead of time and frozen before baking. To bake from frozen, add an extra 5-7 minutes to the cooking time.
  • Try swapping out ground chicken for ground turkey or beef for a different variation.
