For the Chicken:
- 1 lb thinly sliced boneless chicken breast
- 1 tsp salt
- 1 tsp freshly cracked black pepper
- 2 eggs, beaten
- 1 cup Italian breadcrumbs
- 1 cup flour

For the Caesar Dressing:
- 1 cup mayo
- 1/2 cup shredded Parmesan cheese
- 1 tbsp Worcestershire sauce
- 2 tsp anchovy paste
- 2 garlic cloves, minced
- 2 tbsp lemon juice
- 2 tbsp Dijon mustard
For Assembly:
- 2 heads romaine lettuce, chopped
- 4 large (12-inch) tortillas
- Extra Parmesan cheese for topping
Instructions
- Prepare the Chicken: Season the chicken breasts with salt and pepper.
- Bread the Chicken: Place flour in one shallow dish, beaten eggs in another, and breadcrumbs in a third. Dredge each chicken breast in the flour, then dip it in the eggs, and coat it in the breadcrumbs, pressing to adhere.
- Fry the Chicken: Heat oil in a large skillet over medium-high heat. Fry chicken for 5-6 minutes per side, or until golden brown and fully cooked. Let rest for a few minutes before slicing.
- Make the Dressing: In a bowl, whisk together garlic, Dijon mustard, Worcestershire sauce, lemon juice, and anchovy paste. Stir in mayo and Parmesan cheese. Adjust seasoning with salt and pepper.
- Assemble the Wraps: Spread Caesar dressing onto each tortilla, then layer with chopped romaine, sliced chicken, and extra Parmesan. Roll tightly, tucking in the sides.
- Sear the Wraps (Optional): Sear each wrap in a hot pan for 1 minute per side until golden. Slice and serve.

- For a lighter version, use grilled chicken instead of fried.
