Seasoning:

Casserole:
- 1/2 cup white onion, chopped
- 1 red bell pepper, diced
- 1 cup uncooked brown rice
- 3 cups low-sodium chicken broth
- 2 green chilies, deseeded and chopped
- 1 tbsp olive oil
- 2 tbsp tomato paste
- 1 cup corn kernels (canned, drained, or frozen)
- 1 (14 oz) can black beans, drained and rinsed
- 5 cups cooked shredded chicken
- 1 1/4 cups shredded cheddar cheese
Toppings:
- Chopped cilantro
- Chopped green onions
- Chopped avocado
- Salsa
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix all the seasoning ingredients.
- In a 9×13-inch baking dish, combine onion, red bell pepper, uncooked rice, and the seasoning mix. Stir well.
- In a large bowl, whisk together the chicken broth, green chilies, olive oil, and tomato paste.
- Pour the liquid mixture into the baking dish and stir to combine.
- Add the corn, black beans, and shredded chicken. Mix everything well.
- Cover the baking dish with foil and bake for 65-70 minutes, until the rice is fully cooked.
- Remove the foil, sprinkle shredded cheddar cheese on top, and return to the oven for 5-10 minutes until the cheese is melted and golden.
- Let the casserole cool for 5-10 minutes. Top with cilantro, green onions, avocado, and salsa before serving.
