- 2 boneless, skinless chicken breasts
- 1 ripe avocado, sliced
- 4 slices whole wheat or sourdough bread
- 4 slices provolone cheese (or cheese of your choice)
- 1 tbsp olive oil
- 1 tbsp mayonnaise (optional)
- 1 tbsp Dijon mustard (optional)
- Salt and pepper, to taste
- Fresh lettuce, for garnish (optional)
- Tomato slices, for garnish (optional)
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- Heat olive oil in a skillet over medium-high heat. Cook the chicken breasts for 6-7 minutes per side until fully cooked (internal temperature should reach 165°F / 74°C). Remove from heat and set aside.
- Toast the bread slices in a toaster or on a skillet until golden and crispy.
- Spread mayonnaise and Dijon mustard on one side of each slice of bread (optional).
- Slice the cooked chicken into thin strips.
- Assemble the sandwich by placing a slice of cheese on one piece of toasted bread, followed by the sliced chicken, avocado slices, and additional cheese if desired. Top with the second slice of toasted bread.
- If needed, place the assembled sandwich back in the skillet and cook for 2-3 minutes on each side until the cheese is melted and the bread is golden brown.
- Garnish with fresh lettuce and tomato slices if desired, and serve hot.
Notes
- For extra flavor, try adding a squeeze of lime or a pinch of chili flakes to the avocado.
