Description

Ingredients

Base

  • 1 lb waffle fries, store-bought

  • 1 cup queso, store-bought or homemade

Al Pastor Chicken

  • 2-3 lbs chicken thighs, boneless & skinless

  • 1 cup spicy al pastor BBQ sauce

  • 2 tbsp vegetable oil

Pineapple Salsa

  • 1 cup pineapple, diced

  • 1/4 cup red onion, diced

  • 1 tbsp cilantro, chopped

  • 1 tbsp lime juice, freshly squeezed

  • 1 tsp jalapeรฑo, diced

  • 1 tsp vegetable oil

  • 1/4 tsp salt

  • 1/4 tsp black pepper


Instructions

Make the Pineapple Salsa

  1. In a large bowl, combine all Pineapple Salsa ingredients.

  2. Mix well, cover, and refrigerate until ready to serve.

Marinate & Cook the Chicken

  1. In a bowl, mix chicken thighs, al pastor BBQ sauce, and vegetable oil.

  2. Marinate for at least 30 minutes, or up to 24 hours for deeper flavor.

  3. Preheat air fryer to 375ยฐF (190ยฐC).

  4. Place marinated chicken in the air fryer basket and cook for 20โ€“22 minutes, flipping halfway through.

  5. Ensure the chicken reaches an internal temperature of 165ยฐF (75ยฐC).

  6. Remove, chop into bite-sized pieces, and set aside.

Assemble the Loaded Fries

  1. Bake or fry waffle fries according to package instructions until crispy.

  2. Transfer to a serving dish and drizzle with warm queso.

  3. Top with al pastor chicken, extra BBQ sauce, and pineapple salsa.

  4. Finish with more queso for an extra cheesy kick.
