Al Pastor Chicken

2-3 lbs chicken thighs, boneless & skinless

1 cup spicy al pastor BBQ sauce

2 tbsp vegetable oil
Pineapple Salsa

1/4 cup red onion, diced

1 tbsp cilantro, chopped

1 tbsp lime juice, freshly squeezed

1 tsp jalapeรฑo, diced

1 tsp vegetable oil

Instructions
Make the Pineapple Salsa

In a large bowl, combine all Pineapple Salsa ingredients.

Mix well, cover, and refrigerate until ready to serve.
Marinate & Cook the Chicken

In a bowl, mix chicken thighs, al pastor BBQ sauce, and vegetable oil.

Marinate for at least 30 minutes, or up to 24 hours for deeper flavor.

Preheat air fryer to 375ยฐF (190ยฐC).

Place marinated chicken in the air fryer basket and cook for 20โ22 minutes, flipping halfway through.

Ensure the chicken reaches an internal temperature of 165ยฐF (75ยฐC).

Remove, chop into bite-sized pieces, and set aside.
Assemble the Loaded Fries
