Description

These Cheesymite Scrolls are a buttery, cheesy, and savory twist on an Aussie classicโ€”just like the ones from Bakers Delight, but even better! With soft, fluffy bread rolled with Vegemite and loads of melty cheese, theyโ€™re budget-friendly, freezer-friendly, and absolutely addictive. Perfect for snacks, lunchboxes, or brunch platters.


Ingredients

  • 4 cups bread flour (or all-purpose flour)
  • 3 tsp instant yeast
  • 2 tsp white sugar
  • 1 1/4 tsp kosher salt
  • 1 1/2 cups + 2 tbsp warm milk (full or low fat)
  • 3 tbsp salted butter, softened
  • 3 tbsp Vegemite
  • 5 cups (500 g) Colby cheese, freshly shredded (or cheddar, Monterey Jack)

Instructions

  1. In a stand mixer with dough hook, mix flour, yeast, sugar, and salt. Add milk and mix on low until combined. Increase to medium speed and knead for 5 minutes until dough is smooth.
  2. Shape dough into a ball and cover the bowl with cling wrap. Let it rise in a warm spot for 1ยฝ hours, or until doubled.
  3. Punch down the dough and turn it onto a lightly floured surface. Roll into a 48 x 28 cm (19โ€ณ x 11โ€ณ) rectangle.
  4. Spread dough with butter, then Vegemite. Sprinkle 3 cups (300 g) of cheese evenly over the dough.
  5. Roll dough into a log and cut into 12 even pieces.
  6. Grease a 23 x 33 cm (9โ€ณ x 13โ€ณ) baking pan and line it with parchment paper.
  7. Arrange scrolls in the pan, spaced apart. Cover with lightly oiled cling wrap. Let them rise for 30 minutes until puffed by 30โ€“50%.
  8. Preheat oven to 180ยฐC (350ยฐF). Top scrolls with remaining cheese. Bake for 25 minutes. Then rotate tray and increase oven to 200ยฐC (375ยฐF); bake another 10 minutes or until golden.
  9. Cool for 5 minutes in the pan, then lift out using paper and cool for another 5 minutes. Pull apart and enjoy warmโ€”microwave for 20 seconds to reheat!

Notes

  • These scrolls are perfect for lunchboxes and make great snacks!
  • Feel free to use your favorite cheese if you donโ€™t have Colby cheese.
  • For best results, let the scrolls cool slightly before pulling them apart.
