These Cheesymite Scrolls are a buttery, cheesy, and savory twist on an Aussie classicโjust like the ones from Bakers Delight, but even better! With soft, fluffy bread rolled with Vegemite and loads of melty cheese, theyโre budget-friendly, freezer-friendly, and absolutely addictive. Perfect for snacks, lunchboxes, or brunch platters.

- 4 cups bread flour (or all-purpose flour)
- 3 tsp instant yeast
- 2 tsp white sugar
- 1 1/4 tsp kosher salt
- 1 1/2 cups + 2 tbsp warm milk (full or low fat)
- 3 tbsp salted butter, softened
- 3 tbsp Vegemite
- 5 cups (500 g) Colby cheese, freshly shredded (or cheddar, Monterey Jack)
Instructions
- In a stand mixer with dough hook, mix flour, yeast, sugar, and salt. Add milk and mix on low until combined. Increase to medium speed and knead for 5 minutes until dough is smooth.
- Shape dough into a ball and cover the bowl with cling wrap. Let it rise in a warm spot for 1ยฝ hours, or until doubled.
- Punch down the dough and turn it onto a lightly floured surface. Roll into a 48 x 28 cm (19โณ x 11โณ) rectangle.
- Spread dough with butter, then Vegemite. Sprinkle 3 cups (300 g) of cheese evenly over the dough.
- Roll dough into a log and cut into 12 even pieces.
- Grease a 23 x 33 cm (9โณ x 13โณ) baking pan and line it with parchment paper.
- Arrange scrolls in the pan, spaced apart. Cover with lightly oiled cling wrap. Let them rise for 30 minutes until puffed by 30โ50%.
- Preheat oven to 180ยฐC (350ยฐF). Top scrolls with remaining cheese. Bake for 25 minutes. Then rotate tray and increase oven to 200ยฐC (375ยฐF); bake another 10 minutes or until golden.
- Cool for 5 minutes in the pan, then lift out using paper and cool for another 5 minutes. Pull apart and enjoy warmโmicrowave for 20 seconds to reheat!
Notes
- These scrolls are perfect for lunchboxes and make great snacks!
- Feel free to use your favorite cheese if you donโt have Colby cheese.
- For best results, let the scrolls cool slightly before pulling them apart.
