Description

This Cheesy Zucchini Quiche is a savory, veggie-packed dish with a golden deep-dish crust filled with tender zucchini, sautéed onions, herbs, and melty mozzarella cheese. Perfect for breakfast, brunch, or a light dinner.

  • 1 9" frozen deep dish pie crust
  • 3 tbsp butter
  • 1 yellow onion, peeled & diced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 3 cups zucchini, thinly sliced
  • 2 cups shredded mozzarella cheese
  • 3 large eggs
  • 1/2 cup full fat milk

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, melt butter over medium heat. Add diced onion and sauté until translucent.
  3. Add zucchini, dried basil, oregano, salt, and pepper. Cook for 5–7 minutes until zucchini is slightly tender. Remove from heat.
  4. In a bowl, whisk together eggs and milk until smooth.
  5. Place the frozen pie crust on a baking sheet. Layer sautéed zucchini and onions evenly in the crust. Sprinkle shredded mozzarella on top.
  6. Pour the egg and milk mixture over the zucchini and cheese, ensuring even coverage.
  7. Bake in the preheated oven for 35–40 minutes, or until the quiche is set and the top is golden brown.
  8. Allow to cool for 5–10 minutes before slicing and serving.

Notes

  • For extra flavor, add a pinch of nutmeg or garlic powder to the egg mixture.
  • Pre-cooking the zucchini prevents excess moisture from making the quiche soggy.
  • Use a mix of cheeses like cheddar or Gruyere for a richer taste.
