Description

This Cheesy Potato Chicken Bake is a comforting, hearty dish that combines tender chicken, creamy cottage cheese, sour cream, and mashed potatoes, topped with melted cheddar for a deliciously satisfying meal.


Ingredients

  • 1 lb chicken breast or strips, thawed and/or uncooked
  • 4 medium potatoes
  • 1 large onion, diced
  • 2 cups cottage cheese
  • 1 cup sour cream
  • 1/2 cup parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 1/2 tsp cayenne
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 cup cheddar cheese

Instructions

  1. Preheat the oven to 375ยฐF. Coat a 13ร—9-inch or 3-quart baking dish with cooking spray or butter.
  2. Peel and cube the potatoes, then boil them in heavily salted water for 10 minutes. Drain and set aside.
  3. Cut the chicken into 1-inch pieces and set aside.
  4. Dice the onion and place it in a bowl with cottage cheese, sour cream, parmesan cheese, parsley, cayenne, salt, and pepper. Stir to combine.
  5. Add the chicken and boiled potatoes to the mixture and stir to combine.
  6. Pour the mixture into the prepared baking dish and top with cheddar cheese.
  7. Bake for 40 minutes or until the top is golden brown and bubbly.

Notes

  • This dish can be made in individual ramekins for a fun serving suggestion.
