  • 1/2 tsp onion powder
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup diced tomatoes (or Rotel)
  • 1/2 cup chicken broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup heavy cream
  • 1 tbsp chopped cilantro (for garnish)
  • 1/2 avocado, sliced (optional)

Instructions

  • Heat olive oil in a large skillet over medium-high heat.
  • Add the chicken pieces and season with chili powder, cumin, paprika, garlic powder, onion powder, salt, and black pepper. Cook for about 5-7 minutes until the chicken is browned.
  • Add the diced onion and minced garlic to the skillet. Sauté for 2-3 minutes until fragrant.
  • Stir in the diced tomatoes and chicken broth. Simmer for 5 minutes until the mixture thickens slightly.
  • Reduce heat to low and stir in the heavy cream, shredded cheddar, and Monterey Jack cheese. Stir until melted and creamy.
