Instructions
- Preheat the oven to 400°F and warm a large oven-safe skillet over medium heat.
- In a medium bowl, mix the buffalo sauce, honey, garlic powder, smoked paprika, salt, and black pepper. Add the chicken pieces and toss until coated.
- Add the chorizo to the hot skillet and cook for 4 to 5 minutes, breaking it up as it browns. Stir in the diced onion and cook for 2 minutes, then add the minced garlic and cook for 30 seconds.
- Stir the rice into the skillet until coated in the flavorful oil, then pour in the chicken broth.
- Nestle the coated chicken over the rice mixture in an even layer. Bring to a gentle simmer, cover, and cook on low heat for 18 minutes.
- Transfer the skillet to the oven and bake uncovered for 10 minutes, or until the chicken is cooked through and the rice is tender.
- Sprinkle the mozzarella and cheddar over the top and return the skillet to the oven for 3 to 5 minutes, until the cheese is melted and bubbly.
- Top with sliced green onions, let rest for 5 minutes, then serve hot.
