Description

  • 8 ounces fresh chorizo, casing removed if needed
  • 1 cup long grain white rice
  • 2 cups chicken broth

  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded sharp cheddar cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons sliced green onions

Instructions

  1. Preheat the oven to 400°F and warm a large oven-safe skillet over medium heat.
  2. In a medium bowl, mix the buffalo sauce, honey, garlic powder, smoked paprika, salt, and black pepper. Add the chicken pieces and toss until coated.
  3. Add the chorizo to the hot skillet and cook for 4 to 5 minutes, breaking it up as it browns. Stir in the diced onion and cook for 2 minutes, then add the minced garlic and cook for 30 seconds.
  4. Stir the rice into the skillet until coated in the flavorful oil, then pour in the chicken broth.
  5. Nestle the coated chicken over the rice mixture in an even layer. Bring to a gentle simmer, cover, and cook on low heat for 18 minutes.
  6. Transfer the skillet to the oven and bake uncovered for 10 minutes, or until the chicken is cooked through and the rice is tender.
  7. Sprinkle the mozzarella and cheddar over the top and return the skillet to the oven for 3 to 5 minutes, until the cheese is melted and bubbly.
  8. Top with sliced green onions, let rest for 5 minutes, then serve hot.
