Instructions

  1. Prepare the Dough: Activate the yeast by dissolving it in warm water or milk along with a pinch of sugar. Let it sit until bubbly and frothy, about 5-10 minutes. In a large bowl, combine the flour, sugar, and salt. Gradually mix in the yeast mixture and melted butter or oil. Knead the dough for 8-10 minutes until it becomes smooth and elastic. Cover and set the dough in a warm place to rise until doubled in size, approximately 1-1.5 hours.
  2. Prepare the Filling: While the dough rises, mix the gochujang with oil or softened butter until smooth and spreadable. Finely chop the spring onions and grate or crumble your chosen cheese. Keep these ready for assembly.
  3. Assemble the Swirls: Once the dough has risen, punch it down and roll it out on a floured surface into a large rectangle. Evenly spread the gochujang mixture over the dough, then add a layer of shredded cheese and sprinkle chopped spring onions on top. Roll the dough tightly into a log shape, sealing the edges. Slice the log into equal portions to reveal spiral swirls.
  4. Bake to Perfection: Place the swirls on a parchment-lined baking tray, leaving space between each. Optionally, brush each swirl lightly with beaten egg for a golden crust.
