Description

This Cheesy Fig Brie Flatbread combines the creamy richness of brie with the sweetness of fresh figs and fig spread, topped with a blend of Italian cheese and parmesan. Baked to golden perfection and drizzled with olive oil, it’s a deliciously savory-sweet treat.


Ingredients

  • 1 store-bought or homemade pizza dough
  • 8 ounces fresh mission figs, quartered/sliced and stems removed
  • 8 ounces brie, rind removed
  • 2 cups shredded Italian cheese blend
  • 1/2 cup shredded parmesan cheese
  • 1/3 cup fig spread, more as desired
  • 1 to 2 tablespoons extra virgin olive oil
  • Fresh thyme leaves
  • Fresh ground black pepper

Instructions

  1. Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
  2. Roll out the pizza dough on a lightly floured surface to your desired thickness. Transfer the dough to the prepared baking sheet.
  3. Spread a thin layer of fig spread over the dough, leaving a small border around the edges.
  4. Distribute the sliced figs evenly across the flatbread.
  5. Cut the brie into small pieces and scatter it over the figs.
  6. Top with the shredded Italian cheese blend and sprinkle with parmesan cheese.
  7. Drizzle the flatbread with olive oil and sprinkle with fresh thyme leaves and a pinch of black pepper.
  8. Bake for 12-15 minutes, or until the crust is golden and the cheese is melted and bubbly.
  9. Remove from the oven and let it cool for a few minutes before slicing and serving. Optionally, drizzle with extra fig spread for additional sweetness.
