- 8 ounces fresh mission figs, quartered/sliced and stems removed
- 8 ounces brie, rind removed
- 2 cups shredded Italian cheese blend
- 1/2 cup shredded parmesan cheese
- 1/3 cup fig spread, more as desired
- 1 to 2 tablespoons extra virgin olive oil
- Fresh thyme leaves
- Fresh ground black pepper
Instructions
- Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
- Roll out the pizza dough on a lightly floured surface to your desired thickness. Transfer the dough to the prepared baking sheet.
- Spread a thin layer of fig spread over the dough, leaving a small border around the edges.
- Distribute the sliced figs evenly across the flatbread.
- Cut the brie into small pieces and scatter it over the figs.
- Top with the shredded Italian cheese blend and sprinkle with parmesan cheese.
- Drizzle the flatbread with olive oil and sprinkle with fresh thyme leaves and a pinch of black pepper.
- Bake for 12-15 minutes, or until the crust is golden and the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes before slicing and serving. Optionally, drizzle with extra fig spread for additional sweetness.
