- 3 cups cooked and shredded chicken
- 15 oz. bag Nacho Cheese Doritos
- 1 cup sour cream
- 2 (10 oz.) cans condensed cream of chicken soup
- 1 (10 oz.) can diced tomatoes and green chilies (Rotel), drained
- 1 (15 oz.) can whole kernel corn, drained
- 1 (15 oz.) can black beans, rinsed and drained
- 1 oz. package taco seasoning
- 2 cups shredded cheddar cheese
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
- In a large mixing bowl, combine shredded chicken, sour cream, cream of chicken soup, diced tomatoes with green chilies, corn, black beans, and taco seasoning. Mix until well combined.
- Crush about 2/3 of the Doritos and fold them into the mixture. Reserve the remaining Doritos for topping.
- Pour the mixture into the prepared baking dish and spread evenly.
- Sprinkle shredded cheddar cheese over the top, followed by the remaining crushed Doritos.
- Bake uncovered for 25–30 minutes, until the cheese is melted and bubbly.
- Let the casserole cool for 5 minutes before serving.
Notes
- For extra flavor, add chopped jalapeños or a dash of hot sauce to the mixture.
- Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
- Substitute rotisserie chicken for a quick and easy option.
