This Cheesy Dorito Chicken Casserole is a comforting, cheesy, and flavorful dish that combines shredded chicken with Doritos, creamy sauces, and Mexican-inspired flavors. Perfect for a weeknight dinner or a casual gathering, it’s a crowd-pleaser that’s easy to assemble and bake.

  • 3 cups cooked and shredded chicken
  • 15 oz. bag Nacho Cheese Doritos
  • 1 cup sour cream
  • 2 (10 oz.) cans condensed cream of chicken soup
  • 1 (10 oz.) can diced tomatoes and green chilies (Rotel), drained
  • 1 (15 oz.) can whole kernel corn, drained
  • 1 (15 oz.) can black beans, rinsed and drained
  • 1 oz. package taco seasoning
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. In a large mixing bowl, combine shredded chicken, sour cream, cream of chicken soup, diced tomatoes with green chilies, corn, black beans, and taco seasoning. Mix until well combined.
  3. Crush about 2/3 of the Doritos and fold them into the mixture. Reserve the remaining Doritos for topping.
  4. Pour the mixture into the prepared baking dish and spread evenly.
  5. Sprinkle shredded cheddar cheese over the top, followed by the remaining crushed Doritos.
  6. Bake uncovered for 25–30 minutes, until the cheese is melted and bubbly.
  7. Let the casserole cool for 5 minutes before serving.

Notes

  • For extra flavor, add chopped jalapeños or a dash of hot sauce to the mixture.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
  • Substitute rotisserie chicken for a quick and easy option.
