- 7 or 8 large potatoes, peeled and diced
- 1 (10.5 oz) can cream of chicken soup (or any creamed soup of your choice)
- 1/4 cup butter (or 4 tablespoons melted)
- 1/2 cup sour cream
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1 teaspoon salt (or to taste)
- 1 teaspoon dried parsley flakes
- 1/4 cup chopped green onion (or regular onion)
- Pinch of cayenne pepper
- 1 cup Mexican-style shredded cheese (or cheese of your choice)
Instructions
- Prepare Ingredients: Peel and dice the potatoes.
- Combine Ingredients: In a crockpot, combine all the ingredients: potatoes, cream of chicken soup, butter, sour cream, garlic powder, black pepper, salt, parsley flakes, green onion, cayenne, and shredded cheese.
- Cook: Cover the crockpot and cook on low for 4-6 hours, stirring every 2-3 hours to ensure the potatoes cook evenly.
- Serve: Once the potatoes are cooked and tender, serve hot.
