Description

One-pan cheesy chicken over rice with tender chicken thighs, spiced rice, and melted mozzarella and cheddar cheese. A flavorful, comforting meal perfect for any weeknight.

  • 1 tbsp tomato paste
  • 1 tsp garlic powder (for rice)
  • 1 tsp paprika (for rice)
  • 1 tsp chili powder (for rice)
  • 1 tsp oregano (for rice)
  • 1 tsp sazon (for rice)
  • 1-2 tsp chicken bouillon
  • 3 tomatoes, blended (or 8 oz tomato sauce)
  • 2 cups water
  • 2 cups jasmine rice
  • Mozzarella and cheddar cheese, for melting on top

Instructions

  1. Preheat Your Equipment: Heat a large skillet over medium-high heat.
  2. Combine Ingredients: Toss cubed chicken with oil, garlic powder, paprika, chili powder, oregano, sazon, salt, lime juice, and honey.
  3. Prepare Your Cooking Vessel: Sauté chicken in skillet until browned and cooked through, about 6–8 minutes. Remove and set aside.
  4. Assemble the Dish: In the same skillet, sauté onion, bell pepper, and jalapeño until softened. Stir in tomato paste, spices, sazon, and bouillon. Add blended tomatoes and water.
  5. Cook to Perfection: Stir in jasmine rice, cover, and cook until rice is tender.
  6. Finishing Touches: Fold cooked chicken into the rice mixture. Sprinkle cheese on top and cover until melted.
  7. Serve and Enjoy: Serve warm with lime wedges or fresh herbs as garnish.
