Description

This creamy, smoky, and cheesy barbecue chicken dip is loaded with crispy bacon, caramelized onions, banana peppers, and ranch.   • 2 tbsp olive oil
  • 1 1/2 cups shredded rotisserie chicken
  • 6 strips bacon, cooked crisp and diced
  • 1 medium red onion, diced
  • 1 red bell pepper, diced
  • 1/3 cup banana peppers, diced
  • 1/4 cup green onions, diced
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup ranch dressing
  • 1/4 cup BBQ sauce + extra for topping
  • 1 1/2 cups shredded cheddar cheese (or preferred melty cheese)
  • Tortilla chips, for dipping

Instructions

  • Preheat Oven: Preheat to 375ยฐF (190ยฐC).

  • Sautรฉ Vegetables:

    • Heat oil in a skillet over medium heat.
    • Add red bell pepper and cook until tender (3-4 minutes). Remove and set aside.
    • Reduce heat to medium-low and add diced onions. Cook for 8-10 minutes until partially caramelized.
  • Prepare the Dip Mixture:

    • In a large bowl, mix cream cheese, sour cream, BBQ sauce, and ranch dressing until smooth.
    • Fold in banana peppers, sautรฉed red bell pepper, caramelized onions, shredded chicken, half the green onions, and half the shredded cheese.
  • Assemble & Bake:

    • Spread mixture into an oven-safe skillet or baking dish.
    • Drizzle extra BBQ sauce on top and smooth out.
    • Sprinkle remaining cheese over the top.
    • Bake uncovered for 20-25 minutes until bubbly and cheese is melted.
    • Halfway through baking, sprinkle crispy bacon over the cheese.
  • Serve:

    • Garnish with remaining green onions.
    • Serve warm with tortilla chips.

Notes

  • This dip can be made in a slow cooker: Cook on high for 2 hours, then stir, top with cheese and bacon, and cook for another 45 minutes until melted.
  • Works great with different cheeses like Monterey Jack or smoked gouda for a unique flavor.
