These Cheeseburger Stuffed Flatbreads are the ultimate party appetizer or quick weeknight dinner! Inspired by spicy Middle Eastern arayes, these crispy flatbreads are packed with juicy beef, melted cheddar, tangy pickles, and caramelized onions. Ingredients
For the cheeseburger flatbreads:

1 lb (500g) ground beef

1/2 cup caramelized onions, finely chopped (or caramelized onion relish)

1/2 cup pickles, finely chopped

1 cup cheddar cheese, grated or diced

1 tablespoon Dijon mustard

1 teaspoon fish sauce

1 teaspoon salt

Freshly ground black pepper, to taste

6-8 flatbreads or pitas, depending on size

For the burger dipping sauce:

1/2 cup Greek yogurt (or garlic aioli/mayo)

1 tablespoon Dijon or American mustard

1 tablespoon tomato ketchup

1 garlic clove, crushed (or 1 teaspoon garlic powder)

3 pickle slices, finely chopped

1 teaspoon pickle juice (or white wine vinegar)

2 teaspoons smoked paprika
Instructions

Make the filling:
In a large bowl, combine ground beef, caramelized onions, pickles, cheddar, mustard, fish sauce, salt, and black pepper. Mix until well combined. Tip: Pan-fry a small piece to taste-test the seasoning. -
Prepare flatbread pockets:
Slice flatbreads in half and gently open each half into a pocket. Use a knife to help, and donโt worry about small tearsโjust avoid large holes. -
Make the dipping sauce:
Mix yogurt, mustard, ketchup, garlic, chopped pickles, pickle juice, and smoked paprika in a bowl. Stir until well combined and set aside. -
Stuff the flatbreads:
Fill each pocket with about 2 heaping tablespoons of the beef mixture, pressing it evenly so the filling is about ยฝ inch thick. -
Cook the flatbreads:
Heat a large pan over medium-high and drizzle with olive oil. Add stuffed flatbreads and cook for 4 minutes per side, then stand them upright to crisp the open edge. Repeat with remaining flatbreads.
