A comforting pasta bake loaded with cheesy goodness, zesty ranch flavor, tender ground beef, and sweet corn. This quick and hearty dish is a family favorite that’s perfect for weeknight dinners or potlucks!


Ingredients

  • 12 oz rotini pasta
  • 1 lb ground beef
  • 1 cup ranch dressing
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup sweet corn (frozen or fresh)
  • 1/2 cup diced bell peppers
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper, to taste
  • 1/4 cup breadcrumbs
  • 2 tbsp melted butter

Instructions

  • Cook Pasta:
    Boil pasta according to package instructions. Drain and set aside.
  • Cook Beef:
    In a skillet, brown ground beef. Season with garlic powder, onion powder, salt, and pepper. Drain grease.
  • Mix Filling:
    In a large bowl, combine ranch dressing, sour cream, cheddar cheese, sweet corn, and bell peppers. Add cooked beef and pasta, mixing thoroughly.
  • Assemble and Bake:
    Transfer the mixture to a greased baking dish. Combine breadcrumbs and melted butter, then sprinkle over the top. Bake at 375°F (190°C) for 20 minutes, or until bubbly and golden.
  • Serve:
    Serve hot and enjoy!

Notes

  • For added flavor, sprinkle crispy bacon bits on top before baking.
