- 2 tbsp butter
- 1 tbsp olive oil
- 1 small onion, diced
- 3 garlic cloves, minced
- 1 tsp dried thyme
- 1/2 tsp dried rosemary
- 1/2 tsp smoked paprika
- 4 cups diced potatoes (Yukon Gold or Russet)
- 3 cups chicken or vegetable broth
- 1 cup whole milk
- 1/2 cup heavy cream
- 2 cups sharp cheddar cheese, shredded
- Salt and black pepper, to taste
- Chopped fresh parsley, for garnish
Instructions
- In a large pot, heat butter and olive oil over medium heat. Sauté the onion until translucent, about 4–5 minutes.
- Add garlic, thyme, rosemary, and paprika; cook for 1 minute until fragrant.
- Add diced potatoes and broth. Bring to a boil, then reduce heat and simmer for 15–20 minutes until potatoes are fork-tender.
- Use an immersion blender to partially blend the soup, leaving some chunks for texture. (Or transfer half to a blender and return to pot.)
- Stir in milk, cream, and shredded cheddar. Cook over low heat until cheese is melted and soup is creamy.
- Season with salt and pepper to taste. Garnish with parsley and serve warm.
Notes
- For a lighter version, use half-and-half instead of heavy cream.
- Add cooked bacon or ham for a meaty twist.
- Use vegetable broth to keep it vegetarian.
- Top with extra cheese, sour cream, or croutons for added richness.
