Ingredients

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1/2 tsp smoked paprika
  • 4 cups diced potatoes (Yukon Gold or Russet)
  • 3 cups chicken or vegetable broth
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 2 cups sharp cheddar cheese, shredded
  • Salt and black pepper, to taste
  • Chopped fresh parsley, for garnish

Instructions

  1. In a large pot, heat butter and olive oil over medium heat. Sauté the onion until translucent, about 4–5 minutes.
  2. Add garlic, thyme, rosemary, and paprika; cook for 1 minute until fragrant.
  3. Add diced potatoes and broth. Bring to a boil, then reduce heat and simmer for 15–20 minutes until potatoes are fork-tender.
  4. Use an immersion blender to partially blend the soup, leaving some chunks for texture. (Or transfer half to a blender and return to pot.)
  5. Stir in milk, cream, and shredded cheddar. Cook over low heat until cheese is melted and soup is creamy.
  6. Season with salt and pepper to taste. Garnish with parsley and serve warm.

Notes

  • For a lighter version, use half-and-half instead of heavy cream.
  • Add cooked bacon or ham for a meaty twist.
  • Use vegetable broth to keep it vegetarian.
  • Top with extra cheese, sour cream, or croutons for added richness.
