Description

This Cauliflower Beef Taco Skillet is a one-pan, low-carb twist on taco night. Packed with seasoned ground beef, riced cauliflower, and your favorite taco toppings, it’s a quick and healthy dinner the whole family will devour.


Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil (if needed)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/4 tsp oregano
  • Salt and black pepper to taste
  • 3 cups riced cauliflower (fresh or frozen)
  • 1/2 cup diced tomatoes (canned or fresh)
  • 1/4 cup tomato sauce or salsa
  • 1/2 cup shredded cheddar or Mexican blend cheese
  • Optional toppings: diced avocado, sour cream, green onions, jalapeños

Instructions

  1. Heat a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if necessary.
  2. Add diced onion and garlic to the skillet and sauté for 2–3 minutes until softened.
  3. Stir in chili powder, cumin, paprika, oregano, salt, and pepper. Mix well to coat the beef in the spices.
  4. Add riced cauliflower, diced tomatoes, and tomato sauce (or salsa). Stir everything together and cook for 5–7 minutes, until cauliflower is tender and flavors are combined.
  5. Sprinkle cheese on top and cover the skillet for 1–2 minutes until melted.
  6. Serve hot with your favorite taco toppings.

Notes

  • For extra heat, add cayenne pepper or hot sauce to the mix.
