- 3 lbs flank steak or skirt steak
- 1 onion, chopped
- 2 fresh limes, plus extra for topping
- 1 bundle cilantro, chopped
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 stick butter
- 16 mini corn tortillas
Instructions
- Preheat a grill or skillet over medium-high heat. Rub the steak with salt and pepper.
- In a large skillet, heat vegetable oil over medium-high heat. Sear the steak for 4–5 minutes per side, until desired doneness is reached.
- Remove steak from heat and let it rest for 5–10 minutes, then slice thinly against the grain.
- In the same skillet, melt butter and sauté the chopped onion until softened and lightly caramelized.
- Warm the mini corn tortillas on the grill or skillet for 30–60 seconds per side until pliable.
- Assemble tacos by placing slices of steak on each tortilla, topping with sautéed onions and chopped cilantro.
- Squeeze fresh lime juice over each taco before serving.
Notes
- For extra flavor, marinate the steak in lime juice, garlic, and cilantro for 1–2 hours before cooking.
- Optional toppings: diced tomatoes, avocado slices, shredded cheese, or hot sauce.
