Description

Caramelized Spam and Eggs Over Rice is a savory, sweet, and satisfying dish featuring crispy caramelized Spam, fluffy scrambled eggs, and steamed white rice, topped with furikake, green onions, sesame seeds, and optional fried garlic for extra crunch.


Ingredients

  • Sauce: 1 tablespoon soy sauce, 1/4 cup water, 2 tablespoons sugar
  • Eggs: 6 large eggs, whisked; 1/4 teaspoon salt; 1/4 teaspoon white pepper; 1 tablespoon oil (for scrambling)
  • Main: 1 can (12 oz) Spam, diced into 1-inch cubes; 2 cups cooked white rice
  • Toppings: Furikake, chopped green onion, fried garlic, sesame seeds

Instructions

  1. Prepare the caramel sauce: In a small saucepan, combine soy sauce, water, and sugar. Heat over medium heat until sugar dissolves and mixture thickens slightly. Set aside.
  2. Heat 1 tablespoon of oil in a skillet over medium heat and scramble the eggs with salt and white pepper until just set. Remove and set aside.
  3. In the same skillet, add diced Spam and cook over medium heat until browned and slightly crispy.
  4. Pour the prepared sauce over the Spam and cook for 2–3 minutes until caramelized, stirring to coat evenly.
  5. Serve caramelized Spam over cooked white rice and top with scrambled eggs.
  6. Garnish with furikake, chopped green onions, sesame seeds, and optional fried garlic.
  7. Serve immediately while warm.

Notes

  • Fried garlic: thinly slice garlic and fry in oil until golden brown; drain on paper towels.
  • Adjust sugar in the sauce for preferred sweetness.
  • Use short-grain rice for the best texture.
