These Caramelized Onion & Gruyère Stuffed Mushrooms are savory and indulgent, with a rich cream cheese and Gruyère filling, paired with sweet caramelized onions, making them the perfect bite-sized appetizer or side dish.

- 16 mushrooms
- 1 small yellow onion, finely diced
- 1/4 cup + 3 tablespoons olive oil
- 6 ounces softened cream cheese
- 3/4 cup shredded Gruyère cheese
- 1/4 cup gluten free bread crumbs
- 1 teaspoon granulated garlic
- 1 tablespoon Italian seasoning
- Kosher salt & ground black pepper, to taste
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Clean the mushrooms by gently wiping them with a damp paper towel. Remove the stems, finely chop them, and set them aside.
- In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and cook, stirring occasionally, until the onions are caramelized and golden brown, about 10-12 minutes. Remove from heat and set aside.
- In a bowl, combine the cream cheese, shredded Gruyère, gluten-free breadcrumbs, granulated garlic, Italian seasoning, caramelized onions, and chopped mushroom stems. Mix until well combined. Season with kosher salt and black pepper to taste.
- Stuff each mushroom cap with the prepared mixture, pressing gently to pack it in.
- Place the stuffed mushrooms on the prepared baking sheet. Drizzle the remaining 3 tablespoons of olive oil over the mushrooms.
- Bake for 18-20 minutes, or until the mushrooms are tender and the tops are golden brown.
- Serve warm and enjoy!
Notes
- For extra flavor, sprinkle some extra Gruyère cheese on top of the stuffed mushrooms before baking.
- If you don’t have gluten-free breadcrumbs, regular breadcrumbs can be used instead.
- Leftover stuffed mushrooms can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best results.
