Description

These Caramelized Onion & Gruyère Stuffed Mushrooms are savory and indulgent, with a rich cream cheese and Gruyère filling, paired with sweet caramelized onions, making them the perfect bite-sized appetizer or side dish.


Ingredients

  • 16 mushrooms
  • 1 small yellow onion, finely diced
  • 1/4 cup + 3 tablespoons olive oil
  • 6 ounces softened cream cheese
  • 3/4 cup shredded Gruyère cheese
  • 1/4 cup gluten free bread crumbs
  • 1 teaspoon granulated garlic
  • 1 tablespoon Italian seasoning
  • Kosher salt & ground black pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Clean the mushrooms by gently wiping them with a damp paper towel. Remove the stems, finely chop them, and set them aside.
  3. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and cook, stirring occasionally, until the onions are caramelized and golden brown, about 10-12 minutes. Remove from heat and set aside.
  4. In a bowl, combine the cream cheese, shredded Gruyère, gluten-free breadcrumbs, granulated garlic, Italian seasoning, caramelized onions, and chopped mushroom stems. Mix until well combined. Season with kosher salt and black pepper to taste.
  5. Stuff each mushroom cap with the prepared mixture, pressing gently to pack it in.
  6. Place the stuffed mushrooms on the prepared baking sheet. Drizzle the remaining 3 tablespoons of olive oil over the mushrooms.
  7. Bake for 18-20 minutes, or until the mushrooms are tender and the tops are golden brown.
  8. Serve warm and enjoy!

Notes

  • For extra flavor, sprinkle some extra Gruyère cheese on top of the stuffed mushrooms before baking.
  • If you don’t have gluten-free breadcrumbs, regular breadcrumbs can be used instead.
  • Leftover stuffed mushrooms can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best results.
