Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the thinly sliced onions and cook for 10-15 minutes, stirring occasionally, until the onions are soft and caramelized. Reduce heat if they begin to brown too quickly.
  2. Once caramelized, remove the onions from the heat and let them cool slightly.
  3. In a mixing bowl, combine the grated cheddar cheese, Parmesan cheese, garlic powder, onion powder, black pepper, salt, and panko breadcrumbs (if using).
  4. Add the cooled caramelized onions to the cheese mixture and stir to combine evenly.
  5. Preheat your oven to 375ยฐF (190ยฐC) and line a baking sheet with parchment paper or a silicone baking mat.
  6. Scoop out heaping tablespoons of the cheesy onion mixture and place them on the prepared baking sheet, about 2 inches apart. Gently flatten each scoop with the back of a spoon or your fingers to form thin, round crisps.
