Instructions

  • Preheat & Prep:

    • Preheat your oven to 350ยฐF (175ยฐC).
    • Line baking sheets with parchment paper.
  • Mix Wet Ingredients:

    • In a mixing bowl, cream butter, ricotta cheese, and sugar until light and fluffy.
    • Add the egg and vanilla extract, mixing until smooth.
  • Combine Dry Ingredients:

    • In a separate bowl, whisk together flour, baking powder, and salt.
    • Gradually mix the dry ingredients into the wet mixture until just combined.
  • Fold in Chocolate Chips:

    • Gently fold in mini chocolate chips.
  • Shape & Bake:

    • Drop tablespoon-sized scoops of dough onto prepared baking sheets, spacing them about 2 inches apart.
    • Bake for 12-15 minutes, or until the edges are lightly golden.
