Ingredients

Units Scale

For the Shrimp

  • 1 pound raw shrimp
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • Salt and pepper to taste

For the Sweet Potatoes

  • 2 medium sweet potatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

For Garnishing

  • Fresh parsley

Instructions

  1. Prepare the Sweet Potatoes: Start by preheating your oven to 400ยฐF (200ยฐC). Peel the sweet potatoes and cut them into bite-sized cubes. Place them in a large bowl, drizzle with olive oil, and season with salt and pepper. Toss well to ensure even coating, then spread them out on a baking sheet.
  2. Roast the Sweet Potatoes: Roast the sweet potatoes in the preheated oven for about 20 minutes until they are tender and slightly caramelized. Stir halfway through for even cooking.
  3. Prepare the Shrimp: While the sweet potatoes are roasting, rinse and devein the shrimp if needed. In a bowl, combine the shrimp with olive oil and Cajun seasoning, making sure the shrimp are well-coated with the spices.
  4. Combine and Bake: Once the sweet potatoes are done, remove them from the oven and add the seasoned shrimp to the baking sheet. Give it a good mix and return it to the oven for another 10-12 minutes, or until the shrimp are pink and cooked through.
  5. Garnish and Serve: After removing from the oven, sprinkle fresh parsley on top for that pop of color and flavor. Your Cajun Shrimp Sweet Potato Bites are now ready to be devoured!

Notes

  • Donโ€™t Overcook the Shrimp: Keep an eye on the shrimp; they only take a few minutes to cook.
  • Cut Uniformly: Ensure that the sweet potato pieces are of similar size for even roasting.
  • Marinate for More Flavor: Let the shrimp sit with the seasoning for at least 15 minutes before cooking for a more robust flavor.
  • Use Fresh Ingredients: Fresh herbs and spices will enhance the overall taste significantly.
  • Check for Doneness: Use a fork to test the sweet potatoes; they should be soft but not mushy.
