- 1 lb (450g) smoked sausage, sliced into rounds
- 1 tbsp olive oil
- 1 bell pepper, diced
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 tbsp Cajun seasoning
- 1/2 tsp smoked paprika
- Salt and pepper, to taste
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the sliced sausage and cook for 4-5 minutes, until browned.
- Add the diced bell pepper, onion, and garlic to the skillet. Sauté for another 3-4 minutes, until the vegetables are tender.
- Stir in the rice, chicken broth, diced tomatoes (with juices), Cajun seasoning, smoked paprika, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and simmer for 20-25 minutes, until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit, covered, for 5 minutes before serving.
- Garnish with fresh parsley and serve hot.
