Lasagna Roll-Ups
- 12 lasagna noodles
- 1 lb cooked chicken breast, diced (or shredded rotisserie chicken)
- 1 block cream cheese, softened
- 1 1/2 cups ricotta cheese
- 2/3 cup frozen chopped spinach, defrosted and drained
- 4 oz sun-dried tomatoes, chopped
- 1 tbsp Cajun seasoning (store-bought or homemade, see below)
- 2 1/2 cups shredded cheddar/mozzarella cheese, divided
Cajun Alfredo Sauce
- 4 tbsp butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 tbsp Cajun seasoning
- Salt and pepper, to taste
- 1/2 cup grated Parmesan
Homemade Cajun Seasoning (Optional)

- 2 tbsp paprika
- 3/4 tsp salt
- 2 tsp garlic powder
- 2 tsp onion powder
- 2 tsp chili powder
- 1 1/2 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp brown sugar
- 3/4 tsp cayenne pepper (adjust to taste)
- 1/2 tsp black pepper
Instructions
- Preheat oven to 375ยฐF (190ยฐC) and grease a 9ร13 baking dish.
- In a large bowl, mix ricotta and cream cheese until smooth. Fold in sun-dried tomatoes, spinach, Cajun seasoning, chicken, and 1 cup of shredded cheese until well combined.
- Cook lasagna noodles to al dente according to package instructions. Drain and lay flat.
- While noodles cook, make the Cajun Alfredo sauce:
- Melt butter in a saucepan over medium-low heat.
- Add garlic and sautรฉ until fragrant.
- Stir in heavy cream, Cajun seasoning, and Parmesan. Simmer for 5-6 minutes, stirring occasionally, until slightly thickened.
- Spread a few spoonfuls of Alfredo sauce on the bottom of the baking dish.
- Assemble the roll-ups:
- Spread โ cup of filling onto one end of each lasagna noodle.
- Roll tightly and place seam-side down in the dish.
- Repeat with remaining noodles.
- Pour Alfredo sauce evenly over the lasagna rolls, spooning any extra sauce back on top.
- Sprinkle 1ยฝ cups of shredded cheese over the rolls.
- Bake uncovered for 35 minutes, or until edges are crispy and cheese is golden brown.
