Description

These Cadbury Cookies are the perfect Easter treat, with soft sugar cookies topped with a creamy chocolate frosting and a mini Cadbury egg. A delicious and festive way to celebrate the season!


Ingredients

For the Cookie:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt

For the Chocolate Frosting:

  • 1 tablespoon unsalted sweet cream butter

  • 3 tablespoons cocoa powder

  • 1 cup powdered sugar

  • 1 teaspoon vanilla extract

  • 2-3 tablespoons hot water

  • 24 mini Cadbury eggs


Instructions

  • Prepare the Cookies:

    • Preheat oven to 350ยฐF (175ยฐC).
    • In a stand mixer, beat butter and sugar until creamy.
    • Add egg and vanilla, mixing until well combined.
    • In a medium bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients, mixing until just combined.
    • Using a small ice cream scoop, form dough into small balls and place them on a baking sheet.
    • Bake for 8-10 minutes, or until lightly golden.
    • Remove from the oven and press a thumb into the top of each cookie while they are still warm. Let cool completely on a wire rack.
  • Make the Chocolate Frosting:

    • Melt butter in a small microwave-safe bowl.
    • Stir in cocoa powder, powdered sugar, vanilla, and hot water, mixing until smooth and creamy.
    • Spoon the frosting into the thumbprint in each cooled cookie.
  • Decorate:

    • Top each cookie with a mini Cadbury egg.

Notes

  • If the frosting is too thick, add an additional tablespoon of hot water to reach desired consistency.
  • Store cookies in an airtight container for up to 3 days.
  • For a more festive look, try different types of mini Easter eggs for decoration!
