- 1 pound ground beef
- 1 onion, chopped
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (10.75 ounce) can condensed tomato soup
- 1 cup uncooked rice
- 1/2 head of cabbage, shredded (about 8 cups)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon dried oregano
- Optional:
- 1/4 cup chopped fresh parsley
- Grated Parmesan cheese
Instructions
- Brown the Meat:
- In a large skillet over medium heat, brown the ground beef and onion. Drain off any excess grease.
- Combine Ingredients:
- In a large bowl, combine the browned beef mixture, diced tomatoes, tomato soup, rice, shredded cabbage, salt, pepper, and oregano. Mix well.
- Bake:
- Pour the mixture into a 9ร13 inch baking dish. Cover with foil and bake at 350ยฐF (175ยฐC) for 1 hour, or until the rice is cooked and the cabbage is tender.
- Serve:
- Remove the foil and let the casserole stand for 10 minutes before serving. Garnish with chopped parsley and Parmesan cheese, if desired.
