For the Crust:
- 1 1/3 cup flour
- 1/2 teaspoon salt
- 4 tablespoons unsalted butter, cold
- 7 tablespoons ice water
For the Buttermilk Pie Filling:
- 4 large eggs
- 2 cups sugar
- 1 cup buttermilk
- 1 stick butter, melted
- 4 tablespoons flour
- 1 tablespoon lemon juice
- 1 teaspoon vanilla
- 1 teaspoon salt
Instructions
- Preheat oven: Set the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- Make the crust: In a medium bowl, combine flour and salt. Cut in cold butter until mixture resembles coarse crumbs. Add ice water gradually, mixing until dough comes together. Press evenly into the bottom of the prepared pan.
- Pre-bake crust: Bake for 15 minutes until lightly golden.
- Prepare filling: In a large bowl, whisk together eggs, sugar, buttermilk, melted butter, flour, lemon juice, vanilla, and salt until smooth.
- Assemble and bake: Pour the filling over the pre-baked crust. Return to the oven and bake for 35–40 minutes, or until the filling is set and slightly golden on top.
- Cool and serve: Allow to cool completely before slicing into bars. Serve chilled or at room temperature.
Notes
- For extra flavor, sprinkle a light dusting of powdered sugar on top before serving.
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
